orange almond cake

I promised my students a cake a week this is the one I made up last wed.

100g ground almonds
100g flaked almonds
3 eggs
1/3 cup sugar
tablespoon of vegetable oil.
zest one orange and squeeze the juice out.

Mix all together. I kept on moving the mixture from cake tin to cake tin as I couldn't quite get the right size for the amount of mixture.

Put in oven 20-25 mins until knife comes out fairly clean at gas mark 6.

Bonus this is gluten free.
